At ACI, we set students up for success at Arizona’s top resorts and restaurants. That foundation shines at Scottsdale’s legendary Valley Ho hotel, where ACI alum Executive Chef Russell LaCasce crafts seasonal delights at the landmark property.
Chef LaCasce graduated from ACI in 2005 before working his way up renowned local kitchens. Now he leads Valley Ho’s culinary program using his signature blend of classic techniques and modern inspiration.
It’s a long way from ACI externships, but Chef LaCasce says those formative experiences gave him “confidence in all facets of restaurant operations” that makes him the versatile leader he is today. Whether it’s a poolside cocktail or a five-star private event, Chef LaCasce and his team showcase ACI training at Scottsdale’s most storied hotel.
The Valley Ho is the latest stop in Chef LaCasce’s ongoing journey, showing how ACI equips graduates with skills and passion for long-term success. Our students gain real-world foundations to share their talents at Arizona’s most iconic venues.
